Rate my first Pink Cake
Ingredients:
1 kg Strawberries (and/or other berries)
160g icing sugar
200g yogurt
1 lemon
500g mascarpone
250g whipped cream
6 tbsp orange liqueur (or other fruity liqueur)
40 ladyfingers
Preparation:
Halve (or quarter) half of the strawberries and set aside. Set aside some raspberries, blackberries, etc. as well.
Puree the remaining strawberries and berries and mix with the juice of one lemon, 60 g icing sugar, 4 tablespoons orange liqueur and a few crumbled lady fingers.
Mix the mascarpone, yoghurt, 100 g icing sugar and 2 tablespoons orange liqueur until fluffy.
Whip the whipped cream until stiff and fold into the mascarpone mixture.
Layer alternately in the casserole dish, dip the lady fingers into the pureed berries and place in the dish. Then spread a layer of mascarpone cream and a few half strawberries on top.
Finish with mascarpone cream. Refrigerate for a few hours. Garnish the berry tiramisu with the remaining half strawberries and berries and serve.
